Amy Lyons grew up in Minnesota and graduated from Bethel University in 2007 with a degree in Studio Art. She currently works as a cook in a natural food store deli and writes the blog Fragrant Vanilla Cake, which she started in 2010 as a way to share recipes with friends and family, but it grew to sharing with people all over the world. She has a passion for art and creating delicious food, using local and organic ingredients whenever possible. Amy has been a vegetarian since 2003, and a vegan since 2012, which has allowed her to experiment with new ways of creating dishes and thinking outside the box. She used to be a competitive runner, an All-American with state age group records, and still runs for the enjoyment of it. This is how she first became interested in creating more healthful dishes for herself, as fuel to function at a high level. She decided to share her recipes with others, so that they could enjoy good food and health as well!
